About Big Muster Distilling Co

Welcome to Big Muster Distilling Co., where mountain air, Australian botanics, and a dash of the spirit of the high country come together in every drop. We’re proudly based at 5 Cattle Drive, Dinner Plain Victoria - a high-country village where snow gums meet big skies and the seasons shape our craft.

Our story

Big Muster began with a simple idea: make honest, distinctive spirits that taste like where they’re from. Drawn to Dinner Plain’s crisp climate and slow rhythms, we swapped city noise for snow crunch, learned the local lore, and set up a small, hands-on distillery with a big heart.

Big Muster is co-founded by Steve Belli and Elizabeth Davies, who have worked in hospitality since 2000. After decades welcoming guests and perfecting warm, genuine service, they’ve opened a new and exciting chapter here in Dinner Plain - pairing alpine spirits with home-made food, a micro distillery and many more comforts that allow you to experience the Victorian High Country

  • Home-made food - Hearty, house-made plates steeped in heritage from Steve’s Nonna’s Kitchen designed to pair with our spirits and warm you after a day in the elements.
  • Bespoke Micro Distill Services -  Small batch distilling for collaborators and special projects - from concept to bottle.
  • Alpine comforts - Fireside seating, cosy nooks, a pool table, dart board or two, full Audio Visual capability, lighting system and friendly service that turns a tasting into a stay-a-while experience.

We’re proud to be part of the Victorian High Country. You’ll find our spirits on local menus, at regional events, and clinking glasses at community celebrations. Supporting local producers and sharing the stories of this place is part of who we are.  In our Bar you will find the best from local brewries and distilleries celebrating our industry from near and far.

What we make

  • Small-batch moonshine - Bright, aromatic, and alpine at its core, with botanicals that nod to the region’s wild flora and farming community.
  • Barrel aged Negroni -Patiently matured in the cool high country, where temperature swings coax out layered character, in semi char american oak barrels.
  • Seasonal batch releases - Limited runs that celebrate local ingredients and the turn of the seasons - from snow-season sippers to summer sundowners.
